Breakfast Quesadillas
After a smash hit as a featured holiday item at our Santa Brunch in December, 5 Under is adding Breakfast Quesadillas to our Brunch Menu for 2025.
Savory and full of flavor, this quesadilla packs a ton of breakfast favorites all in a buttery, grilled flour tortilla.
Loaded with fluffy scrambled eggs, cheese, and your choice of spicy sausage or crispy, crunchy bacon (or both!), our quesadilla has all you need for that perfect brunch bite. All is complete with salsa and a side of pico de gallo for a mighty great plate.
Chef Tirso Moreno, whom we affectionately call T-Mo, originally made the quesadillas for our Santa Brunch this holiday season as a savory option for the adults.
The Santa Brunch menu was beloved for its Reindeer pancakes, Mini Sweet Stack Pancakes and all the sweetness you want for a fun children’s event. But we wanted to make sure we had something that parents and adults would like for a meaty, delicious meal…
“We had excellent feedback and the customers kept ordering the Brunch Quesadillas,”

“It’s so good and we’re really happy that our guests like it so much that it is going to continue to be a main brunch dish.”
Within just 4 hours of one day, the breakfast quesadillas had more than doubled the orders of our other brunch specials, and we knew we had a hit.
Look for Breakfast Quesadillas on the Weekend Brunch menu starting January 4th Saturday.
