5 Under’s April Wine Dinner is a Sweet Success
This month of April has been quite a showcase for our new menu and 5U restaurant. With fresh, new, exciting dishes emerging as fan favorites these past few weeks, our creative kitchen took another swing to put together a special night for a private dinner event.

The Five Under Wine Dinner was held this week and was a smashing success with smiles all around. Our very own John Dingle created a special four-course menu for the reservation-only event. Each course was served with a pouring of our hand-selected wine pairings. Guests enjoyed the wine tasting with a unique ambiance made just for the evening.
The first course consisted of an artful array of seared sea scallops with pea pureé and crispy pancetta. This was paired with a Conundrum white wine. The scallops had a precise char for a little crisp texture, beautiful color, and a soft, savory bite. The alluring aroma and gorgeous display served as a perfect greeting for the evening.
Course Two included a staff-favorite of lobster bisque with cremé fraiche and chives. The creamy cup of bisque had a deep, rich flavor punctuated with a hearty helping of lobster. This was such a hit, we may just have to bring this back sooner than expected! And just as popular was the Elouan Chardonnay.
This wine’s distinct light, bright, buoyant feel could not have been a finer fit for lobster bisque.
The third course featured an extra special beef tenderloin cooked to order with truffle butter. This sensational steak was a hole-in-one with a subtle outer crust and a tender, juicy, mouthwatering bite. The exquisite color and texture complimented with the truffle butter was a masterpiece on a plate.
Paired with pillow-soft roasted garlic mashed potatoes, this hero of a main dish went perfectly with the Napa Valley Quilt cabernet sauvignon.
This velvety smooth, yet bold wine offers just the right bouquet and ease to go with this level of steak. Chef Dingle and Chef Timo, our 5 Under Kitchen Manager, were both particularly proud of this selection and it went off like a soaring drive off the first tee!
Lastly, our dessert for the fourth course was a sweet surrender with silky smooth chocolate mousse and raspberry coulis. Topped with fresh raspberries, this dessert was a step outside of the norm for our usual desserts at 5 Under, and we are thrilled with the feedback.
Not too heavy, this dessert offers delicious depth and a luscious reprieve from the bevy of hearty bites leading up to it. The famously fantastic Fonseca Bin No. 27 Fine Reserve Porto with its hints of spice and fruity essence made for a wonderful closing act.
Our Five Under restaurant had the sights, sounds, and social flair all under one roof. VP of Food and Beverage, Wendy Smith, and her team made an atmospheric change to fit the affair. The linens on the table, the selection of music, and the classic movies on TV screens—all added ingredients for a unique and enchanting evening at 5 Under—give a great look at how we can transform this golf center into a full-scale entertainment venue for special events and private parties. With the game and golf bays closed off for the night in this immersive, service-first atmosphere, you just may forget there was a golf tournament hours earlier!
